Second cocktail bar for model turned mixologist gets green light


Model turned mixologist and bar entrepreneur, Manachain Monaghan (pictured) has secured council approval for a second cocktail bar, situated in Leeds.

The co-owner of Buxton’s Monk cocktail bar has been given the green light to operate a bar from the 1,700 sq ft basement in the grade II-listed building on South Parade.

It's yet to be disclosed if the new site will also become part of the Monk brand, which also serves up seciality gins, whiskies and craft beers.

Monk, which was launched by Manachain and Jamie Monaghan in 2012, is open during the day for a range of speciality teas and fresh coffee, and light tapas snacks are also offered during the day – cheeses, relishes, pickles and continental hams.

Monaghan's cocktail creations include Heart of the Sea, which uses malic acid to make you salivate more and enhance the flavours of seaweed, elderflower, and a peaty Lagavulin foam. There's also El Ambassdor, made from tequila, hazelnut & thyme liqueur, lime, chilli, and cacao soil.
