Pi Woodfired to open first London pizzeria


Following the launch of a crowdfunding campaign on Growthdeck in June, Hampshire-based Pi Woodfired will be opening its second pizzeria in Battersea Rise, south London.

The first eatery was opened by founder Rosie Whaley in Winchester in 2014, serving up ten different pizzas, including Lebanese Spiced Ground Lamb, Wild Boar Salami, and Hampshire Pork Sausage, as well as a range of salads.

For beverages, Pi offers a cocktail list with drinks such as Ginger Cosmopolitan, Orange Lychee Mocktail, and Elderflower Mojito.

Pi's artisan dough goes through a fermentation process of up to 72 hours long which allows the starch content to be exhausted, transforming it into noble sugars. The starch and gluten is broken down. The result - a light, lean and and airy crispy base rich in flavour.

The Winchester site uses fresh meat is sourced locally from the best producers in Hampshire and the surrounding areas, so it can expected that the new London site will also source locally. The cured meats are from only the finest producers in Sudtirol, Calabria, and Parma in Italy.

Pi only uses mozzarella balls straight from Italy from the finest producers, along with lots of other artisan Italian cheeses.
