Bread Ahead launches baking lecture series with acclaimed author & visionary


Bread Ahead is to welcome the visionary Dr. Nathan Myhrvold, co-author of Modernist Bread (The Cooking Lab LLC), and the acclaimed five-volume, 2,438-page cookbook Modernist Cuisine: The Art and Science of Cooking, to the Borough Market bakery.

Myhrvold and his co-author for Modernist Bread, head chef Francisco Migoya, delved into the history of one of the world’s oldest foods, the science and technology of breadmaking, and why stunts like pumping up bread actually work.

Myhrvold, who was the former chief strategist and chief technology officer of Microsoft Corp, earned a postdoctoral fellowship from the Department of Applied Mathematics and Theoretical Physics at Cambridge University while working with Professor Stephen Hawking.

The one-off evening will be on 23 February at 7pm, and will the first talk in a series of new lectures hosted by Bread Ahead.

The event will begin with an introduction from Bread Ahead founder Matthew Jones, followed by a presentation given by Dr. Myhrvold on his experimental, five-part cookbook, Modernist Bread. His book is a guide for bakers, urging them to be more innovative with one of history’s oldest foods, and documents the science behind breadmaking.

The close study of the process and the importance of good bread is something that Matthew Jones and the team at Bread Ahead feel very strongly about, and with the rise of artisanal baking in the UK, it is more relevant than ever.

Matthew Jones said, “We are thrilled to welcome such an expert at Bread Ahead to discuss history and process of breadmaking. Nathan Myhrvold is a true trailblazer, and the book is an extraordinary feat. With baking and education at the heart of Bread Ahead’s ethos, we are excited to be having this discussion.”

Following Dr. Myhrvold’s talk, there will be a Q&A style discussion where audience members can ask both Dr. Myhrvold and Matthew Jones questions and share experiences.
