Filipino restaurant & cocktail bar opens in Soho

Chef Francis Puyat has brought a little bit of his home flavours to Hoxton by opening Filipino restaurant and cocktail bar, Kinilaw & Bukow.

A popular Filipino starter, 'kinilaw' is a type of ceviche, whereby raw seafood is cooked with palm vinegar and kalamansi, and 'buko' is a Filipino ice cream concept served in a baby coconut shell or homemade vegan and gluten-free waffle cones.

Dishes include Bagoong fisherman’s treat, (daikon-fermented shrimp, green peppercorns and garlic), Mustasa-cradled duck egg (salted duck egg with grated cured yolk), and Baboy bounty (pork belly, cucumber and chilli).

The ice cream menu includes red bean ice cream with miso-infused butterscotch sauce, or lychee ice cream with black pepper popcorn.

The eco-conscious brand ensures that there are no single use containers used for takeaways or deliveries. Customers can either bring their own containers, or can purchase recyclabe and reusable polished coconut shells for £1. That includes hot drinks. The shells can be wrapped with easy-to-recycle aluminium foil on request.

The only straws used are polycarbonate reusable ones from Cocktail Kingdom.
