New executive chef for Swan, Shakespeare


Brian Fantoni has been appointed as Executive Chef at Swan, Shakespeare's Globe in London's SE1, replacing Allan Pickett, who has remained as a non-executive director of Swan London.

Fantoni boasts an impressive CV including his most recent role as Executive Chef at The Westbury hotel in Mayfair, as well as Premiere Sous-Chef at Claridge's, among others. He has taken over the food and drink offer for the all-day dining restaurant, bar and private event spaces.

Alongside Fantoni, Simon Ulph, formerly of Jackson Boxer and Andrew Clarke’s St Leonard’s, has joined the team as head chef.

The iconic Shakespeare's Globe, Swan is a beautiful Bar and Restaurant set over two floors, with stunning views of the Thames and St Paul's.

The Swan London is undergoing a rebranding exercise this year, which will encompass the entire business, including significant menu changes at the restaurant.
