Winchester-based pizzeria to rasie funds for first London site


Pi Woodfired is looking to raise £0.5m to fund the expansion of its Winchester-based pizza business with a new restaurant in south London.

The venue serves up ten different pizzas, including Lebanese Spiced Ground Lamb, Wild Boar Salami, and Hampshire Pork Sausage. There is also a range of salads. To marry with the food, there's a cocktail list with drinks such as Ginger Cosmopolitan, Orange Lychee Mocktail, and Elderflower Mojito.

The brand's Artisan Dough goes through a fermentation process of up to 72 hours long which allows the starch content to be exhausted, transforming it into noble sugars. The starch and gluten is brocken down. The result - a light, lean and and airy crispy base rich in flavour.

The fresh meat is sourced locally from the best producers in Hampshire and the surrounding areas. The cured meats are from only the finest producers in Sudtirol, Calabria, and Parma in Italy.

Pi Woodfired only uses mozzarella balls straight from Italy from the finest producers, along with lots of other artisan Italian cheeses. Lyburn Farm in the New Forest provides the restaurant with the famous old Winchester for the cauliflower cheese pizza and the Rosary goat cheese comes from Salisbury.

Fresh fruit and vegetables are delivered daily from Winchester-based Brimfields, and Isle of Wight Tomatoes come from the Tomato Stall.
