New Japanese restaurant set for Holland Park


Flat Three is a new Japanese restaurant coming to Holland Park in London this April, with 'a new approach to Japanese-inspired food', influenced by Korean and Scandinavian cuisine.

The 40-seater eatery has been created by Juliana Kim Moustakas and head chef Pavel Kanja, who previously worked with Scott Hallsworth at Wabi.

There will be an á la carte and tasting menue and dishes will include Bräckt, a dish of turbot and trout influenced by a visit to Stockholm and a dessert inspired by fermentation with toasted rice, sencha ice cream, ama koji porridge, cherry beer sorbet and buckwheat.

Wines will come from small producers, and there will be sakes as well as cocktails using house-made tonics and tinctures, and a non-alcoholic selection of house-pressed juices, teas, infusions and ferments.
