World’s best pastry chef to open dessert restaurant at Hotel Cafe Royal


The world’s best pastry chef, Albert Adrià is coming to London with an all-dessert restaurant named Cakes & Bubbles, in the Hotel Cafe Royal on Regent Street, opeing this November.

Adrià, who was voted world’s best by The World’s 50 Best Restaurants in 2015, will be creating desserts such as the famous white chocolate and hazelnut cheesecake, which he will be bringing over from his popular Barcelona restaurant, Tickets.

Other treats include Egg flan with dark caramel, Pineapple fruit cake with palm honey, Airwaffles with caramelised bananas, and Chocolate ninoyoyaki cake balls.

To wash these down, there will be Champagnes and sparkling wines, some of which will be available by the glass.

Adrià said, “It’s a project that excites me as a pastry chef. I’ve never opened anything specifically related to the sweet world. Our approach and menu will be a cross between the classical and contemporary.”

Cakes & Bubbles will be the chef’s first permanent site outside of Spain. It’ll be joining the hotel’s growing collection of restaurants, including the 110-cover Laurent from French chef Laurent Tourondel.

The Cafe Royal has opened a dessert restaurant before back in 2016 with patisserie chef Sarah Barber who left the hotel in April.
