Tonkotsu to open 12th site next month


Japanese ramen restaurant chain, Tonkotsu is to open its latest site in London's Shoreditch on 25 October.

Situated on New Inn Yard, the new restaurant will be the brand's 12th outlet, following the Peckham launch in September, and including a concession in Selfridges, Birmingham.

Designed with Moreno Massey Architecture, it will feature a huge light installation made from 1,600 recycled bamboo Tonkotsu chopsticks.

Shoreditch will have its own signature ramen - handmade noodles in a pork and lardo broth, topped with roast pork belly, bamboo shoots, bean sprouts, spring onions, burnt garlic oil and a seasoned egg.

Other dishes include Chicken hiyashi with ponzu dressing, and Gyoza, including pork, ginger & garlic.

For beverages there will be the custom Shimoda Session Pale Ale made by Magic Rock Brewing, plus a selection of Japanese whisky, beers, wines, and cocktails.

The group was founded in Soho in 2012 by Ken Yamada and Emma Reynolds.
