Robil Gill to open The Dairy Bermondsey next week


Robin and Sarah Gill have announced that The Dairy has found a new home in London's Bermondsey and will be opening on Thursday 10 September.

Following the closure of the much-loved original site in Clapham, the team feel very lucky to have found another site south of the river, housed in the newly opened Bermonds Locke. The move allows The Dairy team to continue doing what they love: offering inventive seasonal plates led by the best in British produce.

A firm favourite in Clapham Old Town for seven years, The Dairy was Robin’s first solo opening and where he established his produce-led cooking style. The kitchen team’s clever use of pickling, fermenting and smoking was echoed across the menu of simple bistro dishes with a touch of finesse.

In addition, the restaurant also championed fellow chefs and restaurateurs through a range of events including the legendary Bloodshot Supper Clubs - a series of exclusive midnight feasts that saw Robin Gill and fellow top chefs cooking until the small hours.

While Clapham will fondly remain the first home of The Dairy, the Gill's are excited to bring their beloved neighbourhood restaurant to the vibrant hub of south east London.

Located a stone’s throw from the historic riverside street of Shad Thames and foodie hotspots of Maltby Street Market and Borough Market, The Dairy Bermondsey will follow much of the same produce-led focus as its predecessor.

Alongside a brand new menu including Willie’s mackerel, dilled fresh gherkins, sea purslane, dashi’, ‘Grilled radicchio, broad bean puree, pickled Tropea onions’ and ‘Wood roasted lamb, hayonnaise, charred lettuce, mint oil’, expect to see some Dairy favourite’s returning such as the ‘truffled Baron Bigod, fig and walnut toast, rooftop honey’, ‘Chicken liver mousse, rhubarb jam’ and ‘Salted caramel, malt barley ice cream, cacao’.

The Dairy Bermondsey will continue Robin’s ethos of using the best seasonal produce, working with his close network of suppliers and offering dishes where the ingredients are left to shine. The wine list will continue to focus on natural wines, rare gems and small producers.

Gill said, ‘As many know closing the original Clapham site of The Dairy was a very difficult decision for me and Sarah, but finding a brilliant site so quickly means we are able to retain our staff and bring them over to Bermondsey, which is such a relief. The Dairy was and will always be a family run restaurant led by nature and our journey began in Clapham in 2012.

'Our goal was to create an experience as close to dinning by a farm or coastline in central London with direct relationships to our beloved purveyors from the land and sea. This has developed over the years and while we have moved to our new home in Bermondsey our aim remains the same which is to be the heart and soul of the neighbourhood, creating great memories, or memory loss, whatever the case may be.

Designed by Holloway Li, Bermonds Locke and The Dairy Bermondsey have been brought to life with repurposed materials, inspired by the Southern California cool of Joshua Tree and the Mojave Desert with suspended planters hanging overhead and an abundance of cacti. Guests to The Dairy Bermondsey will be greeted by a central island bar encased with concrete columns surrounded by a series of high tables with short-backed stools. The space is airy and light and already feels like the perfect home for the next chapter for The Dairy.
