Oliver Peyton’s big plans for bakery concept

Restaurateur Oliver Peyton, who is also the founder of up market catering company Peyton & Byrne, has announced plans to roll out his bakery and café concept at up to 10 sites in the next year.

Peyton has successfully secured funding for the project, which will expand his bakery concept beyond concessions and into high-street retail space. The majority of the sites are believed to be in London, although Peyton has said he was in talks about venues outside the capital.

Focusing on fresh produce, cooked at the sites, the bakeries will offer bread and cakes as well as blended teas and coffees, chocolates and preserves.

Peyton didn't rule out more contracts but said that for now the business would focus on its existing arrangements with the Royal Academy, Wallace Collection and National Gallery.
