Brewery and pub operator, Charles Wells is to open a second pub under the Apostrophe Pubs umbrella, with Chris Gerard of Innventure brought in again as a consultant.
The Merlin’s Cave in Chalfont St Giles, Buckinghamshire is currently being refurbished and is set to open in the summer. The menu will offer dishes using locally sourced artisan products wherever possible.
The first venue, The d’Parys in Bedford has proven successful so it is likely that Charles Wells and Gerard will expand Apostrophe Inns further in the near future.
