Browns Brasserie & Bars announce grand refurbishments of three sites this autumn
Browns Brasserie & Bars have announced reopenings and grand refurbishments of their sites in Cambridge (17th October), Sutton Park (21st November) and Exeter (28th November) in the next two months.
Since Browns Brasserie first opened in Brighton over 50 years ago, the restaurants have welcomed thousands of guests with their homemade, comforting British classics and exciting seasonal creations, alongside an unrivalled choice of cocktails, wine and Champagne. The brasseries now occupy prime spots in historic and culturally rich towns and cities across the UK, often in beautiful landmark buildings. The new sites are no exception with Cambridge’s Old Addenbrooke’s Hospital, Sutton Park’s 18th century millhouse and Exeter’s old malthouse with river views.
Each of the renovations pays homage to the buildings’ histories while introducing a fresh, modern style. Relaxed yet elegant, the restaurant interiors draw inspiration from luxe art deco aesthetics, with a captivating blend of opulent textures, inviting hues of calming blues and warming orange-reds, among sophisticated finishes. Each site boasts a standalone cocktail bar and an expansive, light-filled dining area, the ideal setting for a drink, pre- or post-dinner relaxing as well as all-day dining.
The restaurants open in time for the Browns festive menu launch with indulgent dishes designed specially for the holiday season. Starters include Traditional oak smoked salmon, clementine and honey vinaigrette; North Atlantic prawn cocktail; and Roast parsnip and apple soup, followed by mains of Braised blade of beef with buttered mash, maple roast carrots, braised red cabbage, shaved Brussels sprouts with chestnuts, red wine and black garlic sauce; Fillet of sea bass with sauteed potatoes, red peppers, black olive tapenade and salsa verde; and Root vegetable, walnut and almond tart with garlic and thyme roast potatoes. It wouldn’t be a festive menu without the Browns festive turkey with cranberry stuffing, pigs in blankets, garlic & thyme roast potatoes, maple roast carrots and parsnips, mulled wine braised red cabbage, shaved Brussels sprouts with chestnuts and red wine jus and Christmas pudding with vanilla bean custard and brandy butter. Desserts also feature Chocolate ganache torte; Apple and plum crumble; Salted caramel profiteroles; and Lemon meringue tart.
A perfect way to celebrate the festive season, the Browns Festive Afternoon Tea is a real treat! The tea starts with savouries of Brioche roll with lobster tail in Sicilian lemon and dill mayonnaise; Turkey and stuffing sandwich with red onion chutney; Camembert, cranberry and chestnut sandwich; and Maple, mustard and orange dressed pigs in blankets, before warm scones, clotted cream and blackcurrant and strawberry jams.
Mini cakes and puddings are sure to delight including Mixed fruit Christmas cake; Mince pie crème brûlée; Mini carrot and orange cake; and Lemon meringue tart - all served with planet conscious, natural teas from Good Earth Tea. Add an extra sparkle with the Champagne Afternoon Tea or Pink Champagne Afternoon Tea with a glass of Moët & Chandon Impérial Champagne or Moët & Chandon Rosé Champagne. Also available is the children’s festive menus and the gluten free festive menu, accredited by Coeliac UK.

From classics like Steak frites and Chicken & leek pie, to Duck & plum salad and Roast butternut & sage risotto, there is everything from indulgent treats to light bites. Weekends are not to be missed either with the Browns Bottomless Champagne Brunch, available Friday to Sunday until 2pm, where guests can choose from a selection of delicious brunch dishes accompanied by bottomless prosecco, Bloody Marys, Aperol Spritz or Bellinis for £36 per person or unlimited Möet & Chandon Impérial Champagne or Chandon Garden Spritz for just £56 per person. Round off the weekend with a traditional Sunday roast, freshly carved and served with all the trimmings.
Choose from Sunday favourites including roast beef with giant Yorkshire puddings, slow-cooked salted pork belly, a decadent sharing Chateaubriand, or vegan root vegetable, walnut, almond and cranberry roast. Enjoy alongside live piano every Sunday between 1pm-4pm.
