Rhubarb Hospitality Collection appointed catering partner for London Bridge student accommodation


Greystar has appointed Rhubarb Hospitality Collection to launch two new quick-service restaurant concepts at its London Bridge student accommodation.

Rhubarb Hospitality Collection will manage Journal, a contemporary coffee shop, and the Chop, a chopped salad and sandwich concept, at Chapter London Bridge, a new 950-bed student accommodation development located beside the Shard in central London.

Opening later this month, Journal will bring specialty coffee and fresh bakes from Lockdown Bakehouse to London Bridge. The 74 sq m café, with 30 indoor seats and outdoor pavement tables, will trade daily from 6:30am to 5pm.

Next door, the Chop will bring a fresh twist on grab-and-go dining with made-to-order chopped salads and deli sandwiches. Standout creations include the Prawn Star, with harissa shrimp and green goddess dressing, and the Fennel-icious, a mix of fennel salami, mozzarella and balsamic. Open from 11am to 4pm, the bar will also serve sides and sweet treats.

With a focus on sustainability, both outlets will source seasonally and work with the Felix Project and Too Good To Go to cut down on food waste.

RHC will also run the resident-only Sky Bar, perched on the 37th floor of Chapter London Bridge.

The financial terms of the agreement were not disclosed.

RHC’s parent company, US-based Oak View Group, acquired Philadelphia foodservice business Brûlée Catering earlier this year.

The North American stadium operator is reported to have acquired RHC for over £100 million in 2023.

Rhubarb Hospitality Collection, based in London, has been trading for almost three decades and manages a portfolio of restaurants, bars, and event spaces across London, New York, and Berlin.

Its portfolio includes venues such as Historic Royal Palaces, the Royal Albert Hall, and the Hamptons in the US.
