Dishoom reveals details of Edinburgh opening this winter

The team behind the much-loved Dishoom restaurants has revealed further details of the Edinburgh opening this winter, which will create 100 new jobs in the city.

This will be Dishoom’s first location outside London, opening at 3a St Andrew Square before the end of the year. The 100 jobs created for Edinburgh will include openings for chefs, front of house, management and bar team.

Dishoom Edinburgh will be housed in a beautiful 1920s-era Grade A listed building, which was originally built as a warehouse for Forsyth’s department store.

The three-storey restaurant will have an open kitchen on the ground floor, a first floor café / dining room with views across St Andrew Square, and a basement cocktail bar.

Open every day from early ‘til late, diners will be able to enjoy Executive Chef Naved Nasir’s legendary breakfast (Nasir, pictured centre), followed by an all-day sharing menu of authentic and lovingly curated Bombay comfort food – small plates, grills, biryanis, salad plates, rolls and curries.

The Permit Room bar will be a welcome addition to Edinburgh’s cocktail scene, with a number of signature drinks drawing inspiration from Bombay and Edinburgh’s history and heritage.

The Dishoom team has thoroughly enjoyed exploring the connections between Bombay and Edinburgh. Dishoom Edinburgh’s unique design pays homage to the original Irani cafés and a celebrated character who had a huge influence on both cities, Sir Patrick Geddes.

The launch of Dishoom Edinburgh also marks the return of Dishoom ‘Head Babu’, Kavi Thakrar, to the capital. Kavi graduated from Edinburgh University and has always maintained an affinity with the city.

Dishoom is bringing together a brand-new team to fill the 100 jobs created for Edinburgh. Dishoom cares deeply about being a great place to work, and invests heavily in its culture, training, rewards and benefits.

Kavi Thakrar, Dishoom Head Babu, (pictured right with co-founder Shamil Thakrar, left) said, “We’re so excited to be opening in Edinburgh – a beautiful city that was my home for several years while I was at university. And we’re delighted that by doing so, we’re creating 100 new opportunities for people to develop great careers in hospitality. We’re really looking forward to settling into our new home in Edinburgh and can’t wait to welcome you there this winter.”
