Street food pop-up Tony’s Road Trip opening at two Edinburgh Apex Hotels


Renowned chef Tony Singh MBE is teaming up once more with Apex Hotels in Edinburgh to present a vibrant street food pop-up called 'Tony's Road Trip.' This exciting culinary experience blends the finest elements of Scottish and Indian cuisine, promising a delightful fusion of flavors.

Drawing inspiration from Tony's thrilling globetrotting adventures, the menu at 'Tony's Road Trip' will showcase an array of delectable dishes at affordable prices, with the majority priced under £10. Prepare your taste buds for a tantalizing selection of fusion favorites like the beloved Haggis Pakora and the innovative Chicken Tikka Pie. Additionally, Tony's culinary expertise brings forth exciting new creations, including Korean BBQ Pork Belly and the flavorful Fish Tacos served with crema and Loca Salsa.

Tony's Road Trip will be welcoming guests seven days a week, from 12 PM to 10 PM, starting from July 24th and running until September 3rd. You can find this exciting culinary experience at two convenient central locations: Metro Brasserie, located within Apex Grassmarket Hotel, and Elliot's Restaurant, situated at Apex Waterloo Place Hotel, near the vibrant Princes Street.
