Bonnie Gull co-founder to open fishmonger-deli & Champagne bar


The Sea, The Sea, a fishmonger and deli by day, Champagne bar by night, is set to open on Pavilion Road, Chelsea, London SW1, on 26 April.

The brains behind the venture is the co-founder of seafood restaurant, Bonnie Gull, Alex Hunter.

During the day, the site will offer native lobster and langoustine, halibut, turbot and Ike Jima mackerel, all sourced from regional fish markets. While it will be mainly British, they will venture further for special catches, including carabinero prawns and red king crab.

There will also be stocks, sauces and marinades, pies, ceviches, pickled and smoked seafood from the deli.

In the evening, the oyster bar will become a Champagne bar, with small plates, bowls and shellfish platters, like Sashimi of bream, turbot, cured mackerel.

Executive chef, Leo Carreira (formerly Londrino) will serve up dishes such as: Cornish seabass crudo with crispy parsley sweet cicely, Cockles with white miso, chives, Tender squid with pine nuts, sake and beach herbs, and Poached Scottish lobster with olive oil and pepper.

There will be masterclasses covering oyster shucking, fish filleting, and curing, as well as guest chefs including Ikoyi's Jeremy Chan and UNA’s Martin Milesi and Maos' Edoardo Pelicano.
