New London pizza delivery brand set to launch in August


DomaHospitality, part of a larger luxury hospitality group, BHL Global, that includes The Stafford London, its Game Bird restaurant, Sicilian restaurant Norma London, and Michelin-starred Northcote in Lancashire, is set to make its first entry into the fast-casual dining market with the arrival of Gallio.

The brand will initially launch with a delivery-only kitchen in south east London in mid-August with plans to open a full-service restaurant in central London and a further three delivery kitchens by end 2021.

Gallio is inspired by the natural and nutritious Mediterranean diet by featuring the diversity of flavours and ingredients found in the region. The unique menu consists of sharing bowls, pizzas, salads and desserts, has been developed by the Gallio team in collaboration with Ben Tish, chef and culinary director of The Stafford London and Norma.

All dishes are made from scratch and on-site with a menu characterised by its impeccably sourced wholesome ingredients and vibrant flavours to offer 'feel good' food and a 'better for you' pizza.

Key to the concept, and setting Gallio apart from its competitors, is the brand’s artisan signature base. The dough is made from a mix of ancient grains that deliver nutritional benefits – high in protein and antioxidants, an excellent source of fibre and good for the gut.

These ancient grains are mixed with nothing other than sea salt, natural yeast, extra virgin olive oil and filtered water. Each batch is freshly prepared daily and left to prove for 36 hours before being hand-crafted to make the Gallio thin and crispy 12” bases.

Toppings are impeccably sourced and reflect the richness and variety of cuisines found in the Mediterranean to create interesting combinations that are full of flavour yet wholesome.

Options include the likes of spiced lamb, labneh, rose harissa and pickled chilli; and chestnut mushrooms with olive oil, spinach, Aleppo chilli and pumpkin seeds. A seasonally changing special kicks off with a Sicilian-inspired red prawn pizza with grezzina courgettes, red chilli and wild fennel from Ben Tish. Gluten-free and vegan options are available.

All pizzas will be customisable with add-on ingredients such as fennel salami, aged Manchego, piquillo peppers, buffalo mozzarella, chorizo, feta and vegan ‘sheese’.

Gallio will also serve a range of vibrant salads, in two sizes, including a vegan quinoa with green lentils, spinach, avocado, spring onions, mint and parsley and a harissa marinated grilled free-range chicken with fennel rocket, orange and homemade aioli.

Sharing mezze-style bowls deliver bold flavours with the likes of summer herb green tahini, yoghurt and dukkah; beetroot borani, yoghurt, dill, Medjool dates, feta and walnuts; and Datterini tomatoes with chilli, fresh herbs, sumac and pomegranate molasses.

Completing the menu will be two homemade desserts – a sweet pizza topped with fig, mascarpone, wild mountain honey and toasted walnuts and a bitter chocolate almond cake with orange flower water.

A selection of Hackney Gelato ice cream will also be available. Soft drinks come from organic and Fairtrade certified brand Gusto and feature choices such as Sicilian blood orange and real cherry cola.

The menu offers exceptional value with pizzas starting from £6, all sharing bowls at £5.50, small and large salads from £4 and £7 respectively and desserts at £5.

Gallio will offer delivery via Deliveroo within a radius that includes Lambeth, Waterloo, Elephant & Castle, Vauxhall, South Bank and Southwark.
