Leon launches plant-rich salads & vegan rainbow soups into Sainsburys


Healthy fast casual chain, Leon has just announced the expansion of its grocery range - through its exclusive partnership with Sainsbury’s - with single-serve plant-rich salads and vegan rainbow soups, created to enjoy at home.

Lunch is a big part of the Leon day, and now the brand wants to bring its food to even more people, which are perfect for convenient, plant-rich, work-from-home meals.

The three new meal soups and three new salads take their inspiration and flavour combinations from the brand's restaurant menu through the years.

The company is celebrating the power of plants with its new rainbow soups, and all three are vegan and gluten-free. These meal soups feature a variety of plants and vegetables, helping you on your way to eating 30 different plants a week.

There are hearty, autumnal flavours such as the Curried Coconut & Sweet Potato Rainbow Soup with cauliflower florets and carrots, Roasted Tomato & Harissa – with roasted red peppers and fennel seeds, which is high in fibre, and British Pea & Pesto - with Italian basil oil.

These convenient lunch options are all a source of fibre and two of your five a day, making them a delicious lunch option.

Of the single-serve ready to enjoy salads range, two are vegan, and one is vegetarian. Introducing the vegan Leon Kale Caesar Pasta Salad, a homage to one of the first four salads to grace the brand's menu back in 2004 when it opened its first restaurant in London's Carnaby Street.

Leon has swapped out the classic romaine leaves for shredded kale, Riccioli pasta, vegan parmesan shavings, and have even created its very own creamy-vegan Caesar dressing to give a twist to the classic Caesar Salad. This is topped off with tamari-roasted seeds.

The Leon Black Bean rice box made its first appearance on the menu in 2016, and it became such a hit that it’s stuck around ever since. The vegan Brazilian Black Bean Salad is a delicious take on the restaurant staple and features black rice, red quinoa, black turtle beans and sweetcorn. Its tossed in a smoked-aioli dressing, and topped with chipotle-enrobed, skin-on roasted sweet potato chunks.

The Greens & Grains Salad, another Leon classic dish from the 2004 restaurant launch menus, and named ‘The Original Superfood Salad’, includes broccoli florets, sweet garden peas, cucumber slices and edamame beans. This topped with pumpkin seeds, and whole feta cubes, and finished with a sweet and tangy Leon vinaigrette.
