GM & Head Chef announced for brand new Hotel Indigo Exeter


The soon-to-open Hotel Indigo Exeter has appointed a new General Manager, Rebecca Coonan and Charlotte Vincent as Head Chef for the main restaurant,

Owned by Hotel Exe Ltd, Hotel Indigo Exeter will be managed by Castlebridge Hospitality, which already manage three UK Hotel Indigo hotels in Bath, Chester, and Stratford upon Avon.

Rebecca has more than 20 years’ experience in hospitality having previously worked in several luxury, destination properties. Previous roles have included Business Development Manager at The Idle Rocks in St Mawes on the Roseland Peninsula in Cornwall.

Before that she worked as General Manager at The Cornwall Hotel in St Austell as well as General Manager at Park House near Chichester where she turned the venue from a guest house to a stunning destination Hotel & Spa.

Rebecca moved from West Sussex to the South West in 2016 with her three children and husband to be in the countryside and be surrounded by more open space. They have since made their home in Devon.

Rebecca shared, “I want to make Hotel Indigo Exeter the best place to stay, drink, eat and relax in this amazing, vibrant city. We look forward to opening our doors to showcase this magnificent hotel and what we have achieved in its transformation.”

Simon Hall, Managing Director at Castlebridge Hospitality, added, “We’re delighted to appoint Rebecca as our new General Manager at Hotel Indigo Exeter. Rebecca brings with her a wealth of experience and expertise in the hospitality industry, and I know will be a fantastic asset to the team.”

The hotel will feature Colson’s Bar and Restaurant and Becketts Champagne & Cocktail Rooftop Bar. Charlotte Vincent, who has just featured on BBC2's Great British Menu, will be the chef for the restaurant.

Charlotte joined Michael Caines at Gidleigh Park, where she worked as a pastry chef, before moving to The Royal Clarence Hotel in the same capacity. She took over at The Five Bells in Devon three years ago, earning the pub a place in the UK’s Top 50 Gastropubs shortly afterwards.

The Dugout” Sports Bar has already opened and although it sits within the hotel building, it has its own entrance and exit. It offers a range of eats such as wings by the kilogram, sandwiches, burgers and hot dogs, steaks, loaded fries and salads, plus desserts. Drinks include Somerset Cider, British and craft lagers along with guest ales.

Simon said, “We are thrilled to have opened The Dugout Bar before we open Hotel Indigo Exeter which I’m sure will be a popular Bar amongst sporting fans. We’re also delighted to welcome Charlotte to the team who will be a tremendous asset to Colson’s Restaurant”.
