ExCeL London Hospitality welcomes Bryn Williams pop-up series


Renowned Welsh chef Bryn Williams and ExCeL London Hospitality, a joint venture between Levy Restaurants UK and ExCeL London, have collaborated to bring Bryn’s signature dishes from his brand new restaurant at Porth Eirias to the capital’s multi-award winning events venue as part of a new pop-up series

The pop-up opens at ExCeL London on 7 November to coincide with World Travel Market, where over 100,000 visitors will have the opportunity to sample some of the dishes developed by for the restaurant in Porth Eirias, Colwyn Bay, North Wales, which is known for its local seafood and traditional Welsh recipes.

Bryn has been part of the most prestigious kitchen teams in the UK. Working under Marco Pierre White at The Criterion, Michel Roux at Le Gavroche for three years, The Orrery where he was senior-sous chef for four years and is now Chef Patron of Odette’s, London. Bryn has published numerous cook books as well as present his own TV-series where he shares his love of Welsh cooking.

The pop-up will run for the next three months where visitors will find classics including hot lobster brioche rolls, crab cakes, fish finger butties, treacle cured brisket and salmon with gazpacho, alongside a range of vegetarian options on the menu. All of the fish is MSC certified and fully sustainable.

Bryn Williams added, “It is an incredibly exciting opportunity to take my dishes on the road and bring our typically Welsh experience to ExCeL London. Seafood takes center stage on our menu, using some of my favorites such as lobster, plaice and mackerel but we also have meat and vegetarian dishes so there is always something for everyone to taste.”

The arrival of Bryn Williams complements ExCeL London Hospitality’s vision to redefine every aspect of the visitors’ food and drink experience and establish food as an enabler of great event outcomes. The partnership between ExCeL and Levy Restaurants UK underlines the latter’s philosophy for producing dishes with seasonal, British ingredients and providing memorable occasions for its guests.
