Former Marco Pierre White pub under new ownership


Iconic Sussex pub and restaurant, The Rainbow Inn at Cooksbridge, which was previously operated by Marco Pierre White, is set to open at the end of the month.

Alison Atherton and her family acquired the venue through Fleurets, and she has been managing a refurbishment.

The new team in the kitchen will be led by Alex Jones, who comes from a 2-Rosette background. He is keen to cook fresh home-made dishes with the emphasis on flavour.

Atherton describes them all as 'passionate foodies' and menu choices at The Rainbow will rotate regularly to make the most of seasonal local produce. For those not wanting a substantial meal, there will be tea and coffee, cakes, sandwiches and bar nibbles. The Rainbow will be stocked with drinks from local producers.

Nick Earee, who handled the transaction of the free of tie lease, commented, “I have known the Rainbow for many years. Having worked with both the freeholder and tenants, I am delighted that Alison will re open it shortly and she has some very exciting plans.“

Atherton's enthusiasm is contagious, 'My family and I cannot wait to open the doors and throw ourselves into the life of the community. Of course we want The Rainbow to be recognised for consistently excellent food and drink but, more importantly, it will be somewhere that is renowned for its warm welcome and friendly faces. A place to escape to with friends and family, relax, and be looked after.'

There are exciting events planned too, including a Halloween Party, themed food evenings and of course Christmas and New Year festivities.
