Mission Mars brand, Rudy’s Pizza Napoletana is to open a new pizzeria and pizza school, Rudy's Pizza Academy, in its Manchester hometown this spring.
The new 8,000 sq ft location on Portland Street resides in the former Dawsons Music & Sound site. Spanning two floors, including a mezzanine, the space will be home to Rudy’s pizzeria and very own pizza school: Rudy’s Pizza Academy, a world-class destination for pizzaiolo talent.
Serving the perfect and classic Neapolitan pizza since 2015 from its original Rudy’s in Ancoats, the acclaimed pizzeria has since opened 16 sites across the UK, with the new 120-cover pizzeria in Portland Street being its sixth location in Manchester.
Born out of passion for pizza, Rudy’s follows the authentic Neapolitan tradition of pizza making, serving classic recipes such as Marinara, Margherita and Calabrese – all originating from Naples, the birthplace of pizza.
Rudy’s has been praised by many as one of the best pizzerias in the UK, it is renowned for its consistency and quality in Neapolitan pizza making. On a mission to pave the way in pizza making all accordance to a truly authentic Neapolitan technique, Rudy’s is proud to open Rudy’s Pizza Academy at the new Portland Street location.
The Academy will take just over half the space at Portland Street, providing a structured training programme and open to both experienced pizza chefs, wishing to learn the Rudy’s way, and to those completely new to making pizza. Every new Rudy’s back of house team member will start their journey at the Academy.
It is a widely known secret that Rudy’s dough is cooked in a Stefano Ferrara oven for just 60 seconds – resulting in a soft and light pizza with an airy and raised cornicione (the edge or rim of the pizza).
Nevertheless, there is so much more in the art of perfecting the classic Neapolitan pizza. Rudy’s Fast-Track Pizzaiolo Programme combines both practical training, learning the theoretical aspects of a Neapolitan pizza and extensive knowledge of their ingredients.
Rudy’s Pizzaiolo Academy is set to welcome over 100 pizza chefs in this first year, providing pizza chefs the opportunity to learn, grow and build a rewarding career with Rudy’s.

The new location at Portland Street will also be the HQ for Rudy’s Bake at Home. Back soon by popular demand, Bake at Home is hand-made by Rudy’s pizzaiolos using the same fresh dough and Neapolitan ingredients used in the pizzeria, then blast chilled and vacuum packed with love and delivered straight to customer’s doorstep.
Rudy’s Bake at Home will be available for nationwide delivery and will relaunch this spring.
