Kebab Queen announces New Head Chef


Kebab Queen has revealed that Pamir Zeydan is set to assume the role of the new Head Chef, commencing on the 16th of August 2023.

With his extensive background in diverse fine dining restaurants, Pamir will bring his singular approach to Kebab Queen’s innovative 10-seat counter dining service.

Pamir’s journey began in Turkey, and his cookery has been shaped by Kurdish and Mediterranean influences. His low waste, heartfelt menu style showcases authentic flavours and ultra-seasonal ingredients. He has worked with chefs who studied beneath culinary legends Paul Bocuse and Alain Passard. More recently, Pamir worked with Manu Canales and Philli Armitage Mattin at Kebab Queen, learning the restaurant’s distinctive service style.

Ready to infuse his deep interest in Kebab Queen’s very particular relationship with food into his cooking, Pamir’s vision is one of immersion and connection. Drawing inspiration from humble origins, he will elevate traditional Turkish dishes to create the ultimate Kebab Queen dining experience.

Guests can expect a menu that celebrates the essence of Mediterranean cuisine, featuring dishes that are both comforting and inventive. Typical dishes on Pamir’s menu will include Dover sole kebab served on an ironed hispi cabbage taco with roasted red pepper purée, and a Spit-roast Cag kebab of aged Dalesbred mutton with puffed pita, charred heritage tomato ragù, smoked Turkish yoghurt, charred Carlston pepper, shallot and sumac salad.
