Vintry & Mercer, which is nestled at the heart of the City, is set to open its doors on 4 February.
The new 92-bed hotel will offer a number of areas for dining and drinking, including a rooftop restaurant where diners can enjoy charcoal-grilled meals with an impressive view.
The kitchen is headed up by Chris Golding, formerly at Nobu, Nahm at the Halkin and Zuma. He has already launched Apero at the group's sister hotel The Ampersand, and was most recently at Dinings at the Norman Hotel in Tel Aviv.
The Vintry Kitchen will be serving up Asian-style dishes like Scottish scallop carpaccio with cucumber, yuzu & caviar, Steamed buns and sandos with fillings like chicken karaage and kimchi, and Wagyu beef, Japanese mustard and pickled cabbage.
There will also be sharing plates like Sweet soy-braised beef ribs with smoked bone marrow, and Jerusalem artichoke & sake roasted Chinese cabbage with truffle butter. Wine will be served tapped from casks surrounding the restaurant.
The terrace menu will be modern British, and using a charcoal oven chefs will create plates that focus on farm-to-plate with seasonal ingredients. Dishes will include Hay-smoked beef tartare, Norfolk white free-range chicken glazed with honey & lavender, and Dorset blue lobster with Espelette butter & purslane.
The subterranean cocktail bar, Do Not Disturb Bar, will have its own entrance on Garlick Hill and will be inspired by the speakeasy bars of 1920s New York. Mihai Cosmin, previously of Berners Tavern and Nine Lives, will be in charge, offering speciality barrel-aged and house cocktails, and a New York-inspired menu of small plates, tacos and sliders.
