Gaucho has announced a series of leadership changes aimed at strengthening the business and enhancing performance, as newly appointed CEO Baton Berisha rolls out the next phase of his growth strategy.
Pedro Nunes has joined the steakhouse group as Operations Director for London, bringing more than a decade of experience from The Ivy Collection.
During his time at The Ivy Collection, Nunes oversaw multiple high-profile openings and led international franchise development.
In his new role, he will focus on elevating service standards, strengthening company culture, and driving profitability across Gaucho’s 12 London locations.
Meanwhile, current Operations Director Sean Weeraratna has been appointed Regional Operations Director, overseeing Gaucho’s eight sites outside of London.
Zack Charilaou, a 17-year veteran of the group, will now lead the sales and reservations department in his role as Business Development Director.
The role draws on his deep experience and brand knowledge, acknowledging his success in driving business growth through out-of-restaurant event sales.
Anthony Ekizian will head up Gaucho’s newly restructured back-of-house operations in his role as Culinary Director, introducing a modernised approach to kitchen management, procurement, and execution.

Berisha took over as CEO in March, succeeding long-time leader Martin Williams, who stepped down last year.
In May, Rare Restaurants, Gaucho’s parent company, closed its last remaining M Restaurants location to concentrate fully on the Gaucho brand.
Shortly afterward, Rare also closed its Crane Tap pub in Twickenham, leaving Gaucho as the sole brand in its portfolio.
