Award-winning Butchies to open first perm eatery


Garrett and Emer FitzGerald, founders of Butchies - London’s favourite premium fried chicken sandwich brand - have announced they will launch their first permanent Butchies restaurant on Rivington Street, Shoreditch, at the end of November.

Split across two floors, Butchies will accommodate 45 covers for both dine-in and takeaway, making it a handy pit-stop for local office workers in the Old Street area, as well as those looking for a more relaxed dinner. The menu will feature a range of wings, sides, salads, specials, homemade pickles/hot-sauce, shakes, cocktails, wine and a craft beer vending machine, serving over 20 varieties.

Provenance, quality produce, and sustainability will be at the heart of Butchies’ all-day menu. Garrett and the team have sourced premium, sustainable packaging and ingredients, including higher welfare, slow reared free-range chicken from Castlemead Poultry in Somerset. They are also the first UK street food trader to use a pressure fryer specially imported from the US, which ensures the juiciest most flavoursome fried bird possible.

The Butchies journey started at Broadway Market in 2014 with the intention of creating the ultimate fried chicken sandwich for London, inspired by recent New York fried chicken offerings, such as David Chang’s Fuku in New York. With their now multi-award-winning sandwich, Butchies will continue to deliver the ultimate, higher-welfare product at an affordable price, while utilising premium New York-style counter service to redefine fast casual dining in London at their new restaurant.

The menu at Butchies will offer six free-range fried chicken sandwiches all served in soft butter-toasted buns. The options include: The Original with house pickles and Butchies’ homemade garlic & fresh herb aioli; Cheesy Rider a labour of love from Garrett, served with house pickles, Butchies’ hot pineapple reaper sauce and lashings of oozing melted Red Leicester cheese, and Jenny from the Block with guacamole, chipotle mayo and smoked streaky bacon. The Buffalo Halloumi is served with house pickles, buffalo sauce & blue cheese ranch.

A list of sides including Hand Cut Twice Cooked Fries, and Cheese Fries with Red Leicester cheese dripping will act as the perfect accompaniments to the sandwiches. While their award-winning Wings, available regular or hot, and Kimchi Honey-Butter Wings will also be on offer.

An all-star cast of local producers will grace the drinks menu including Dalston's 40ft beer on draft, Cloudwater beer, Beavertown beer and Sandows cold brew coffee.

Garrett said, “Packing in the desk job to start Butchies four years ago has been one of the best decisions I’ve ever made. Bigger queues combined with selling out earlier and earlier each week at Broadway Market made us realise we were on to something really special.

Designed by Block1 Design, Butchies will challenge the established notion of a 'chicken shop' while retaining the fun and character of the Butchies brand. Exposed original walls will be retained, combined with striking neon signs accents of red and green throughout the restaurant to create interest and texture from the walls to the counter.

Garrett has worked with Adam Hyman and CODE Hospitality to help fundraise and open the new Butchies Rivington Street site. CODE will continue to work with Butchies going forward.
