New look unveiled for Bill’s Victoria


Bill’s Restaurants has revealed a new look for its London Victoria site with the grand reopening set for Thursday 7 November.

Whilst staying true to its roots, the restaurant will undergo a transformation with modern decor, luxurious velvet seating and decadent chandeliers. The restaurant will have a grand brasserie feel once completed with soaring ceilings, a spacious feel and a beautiful mezzanine dining floor.

Bill’s Victoria is prominently positioned in the Cardinal Shopping Centre and is a fantastic spot for working lunches and after work cocktails and dinner. The refurbishment will see the improvement of their wonderful outdoor terrace and seating and it is set to be transformed in partnership with Hendricks Gin. It is the perfect spot for guests to dine before the theatre or just to have a cocktail or two.

Bill Collison, Founder of Bill’s, said, “Good quality food in a welcoming environment has always been at the core of Bill’s. We have loved being in our current spot in Victoria for the past two and a half years and we felt the time was right for a fresh new look for the restaurant.

Although the restaurant interiors have had a revamp, the food is still at the very core of every Bill’s restaurant, with the team recently enhancing their evening menus. The menu has always had a strong emphasis on vegetarian food and fresh produce which stems from founder Bill Collison’s days as a greengrocer and the basis of his first restaurant in Lewes.

They have introduced seasonal changes to their menus and recently their autumn menu on where guests can try Jackfruit Salad Bowl, with spicy smoked chilli sauce with mixed grains and rice, edamame beans, red cabbage, toasted cashew nuts, lettuce with a mint and lime yoghurt, and Roasted Butternut Squash & Feta Risotto, with baby spinach and courgette, topped with shredded fennel salad and toasted pumpkin seeds.

To finish, diners can enjoy the new autumnal Spiced Pear and Raspberry Eton Mess.

There will be a range of cocktails also being added to the menu, including a Sparkling Blackberry Negroni and Hazelnut and Coffee Old Fashioned.
