All-day salad eatery launches today in London with more planned

An all-day fast casual salad restaurant, with over 50 different ingredients to make the perfect salad, has launched today in Spitalfields, London, after many delays due to the pandemic, and with plans for expansion across the UK.

The Salad Project was founded by friends, Florian de Chezelles (pictured right) and James Dare (left) (formerly of LVMH and Firmdale respectively), who began the project in 2019 using their combined experience in the hospitality industry to pursue their dream of owning their own casual dining restaurant.

The Salad Project is situated in a spacious, window flanked site on the corner of the Fruit and Wool Exchange in Spitalfields, which was first built in 1929 and sold unusual fruits and vegetables to the public.

The 1,800 square foot space boasts a huge central salad bar for a smooth flowing and stress-free customer experience. The space, which was designed by YourStudio, can seat up to 25 people on tables and stadium-style seating inside, and 12 seats outside for terrace dining.

For the menu, de Chezelles and Dare has teamed up with friend, chef and Nutritionist, Clementine Haxby, who helped create the extensive menu, based on healthy and equally delicious customisable salads.

The menu features a large option of salads, bowls, soups and fully customisable dishes to suit all dietary needs as well as seasonally changing specials highlighting the best of what can be grown in the UK.

All the ingredients at The Salad Project have been sustainably sourced from The Eden in the City, vertical farming project in Dundee and well-known restaurant supplier Natoora before being cooked fresh every day on site.

The Salad Project delivers across East London via Deliveroo and through their website with all food arriving in biodegradable sugarcane packaging.
