Coal Rooms founders become Head of Food at MeatLiquor


Scott Collins, co-founder of MeatLiquor the London-born burger pioneers, has welcomed Sam and Alicja Bryant to the family, as Head of Food.

Available across all MeatLiquor sites, the pair will be injecting fresh ideas with their new experiMENTAL menu.

Beginning at The Princess of Shoreditch, Sam and Alicja then opened Coal Rooms with a bold menu based on cooking over wood and charcoal. After leaving Coal Rooms, the duo continued their work with live fire, and in 2018 they created Whole Beast, a nose-to-tail concept that gained a cult following, cooking at Meatopia and Carousel.

The duo began working with MeatLiquor during lockdown, re-opening MeatLiquorED for takeaway causing O.G. (socially distanced) W1-style queues.

Diners will be able to enjoy their Southern Fried Chicken Drumsticks with Buffalo Gravy and Mash, where Turner & George chicken will be served alongside a combination of the pair’s two loves: buffalo sauce and chicken gravy.

The Garlic Mushroom Burger has a nostalgic element, with flavours that take guests back to the classic pub dish of Garlic Mushrooms where Sam first began cooking at the age of fourteen, this version sees breaded mushrooms served with garlic donair sauce and garlic crack.

The Filled It With Fish will be a gourmet take on the McDonald’s favourite, with panko breaded fish fillets covered in homemade tartare sauce. Following the success of their coronation chicken with Whole Beast, the pair will also offer a Coronation Fried Chicken Burger as an ode to their previous work.

Their Meatloaf Sandwich, an English and Polish hybrid, will allow guests to enjoy food inspired by the two chefs’ backgrounds.

The Bryant's ingenuity doesn’t just stop with the mains. Pudding have been developed with Alex at Ice Cream Union - the Ice Cream Sandwich has both jaeger ice cream and caramel running through it, and the classic Neapolitan has been reworked, alongside Tiny Rebel with layers of raspberry, and Pump Up The Jam, Chocolate & Stay Puft, and Five Dollar Shake.

This will be alongside Freeze Cakes - frozen cheesecakes that will feature a re-imagination of the classic MeatLiquor dessert Filth Pie.

Scott Collins added, “We’ve spent the last joyous 18 months subtly tweaking every current dish on the menu. That’s been a brilliant exercise but now we’re REALLY going to have some fun.”
