New Head Chef for Adam Byatt’s Bistro Union


Andy Lambert has been appointed as Head Chef at Bistro Union in Clapham, bringing with him years of industry experience along with a breadth of knowledge on the forever-evolving London food landscape.

Stepping into Joshua Hooper’s shoes, Lambert will continue to create seasonal menus, guided by the ethos of using fresh, flavourful produce sourced from local suppliers.

Lambert is no stranger to working in a neighbourhood restaurant, having previously flexed his culinary talents at the revered Canton Arms in Stockwell as Head Chef.

During his successful seven-year stint, the modern British gastropub was consistently featured in the Michelin Guide, Good Food Guide, Estrella’s Top 50 Gastropubs and, most recently, nominated for a GQ Food Award.

Lambert has earned his stripes working in several notable restaurants during his two-decade career, including Head Chef at Central Market, which, during his time there, saw the restaurant attain recommendations in the Michelin Guide, The Good Food Guide 2014/15 and awarded an AA rosette.

He has also been employed as Senior Chef De Partie at Urban Bar and Brasserie and fine-dining establishment Hemingway’s, and Head Chef at The Goat Bar and Restaurant.

Ready for a new challenge and looking to further improve on his ambitious cooking style, Lambert has taken the reins at Bistro Union, the sister venue to Michelin starred Trinity Restaurant, a quintessentially British Neighbourhood Bistro by Adam Byatt located in the heart of Clapham’s Abbeville Village.

Lambert’s menus look set to be inventive, creative, and brilliantly British at Bistro Union, which is now open.
