Sticks’n’Sushi to launch first Scottish location


Danish restaurant group Sticks’n’Sushi is preparing to launch its first location in Scotland this November, opening a 177-seat dining room and bar on George Square in Glasgow.

The space has been designed by OEO Studio, the Danish design company known for creating Noma Kyoto.

With this new opening, Sticks’n’Sushi will have a total of 31 restaurants across Denmark, the UK, and Germany.

The menu will include dishes such as beef tataki, beef fillet with miso aioli, wagyu tartare with avocado, miso-glazed black cod, and grilled duck served with egg yolk.

Andreas Karlsson, group chief executive at Sticks'n'Sushi, said: “We are delighted to be bringing Sticks'n'Sushi to Scotland – and what better place for us to begin our northern adventure than Glasgow. As we continue to look to grow both in the UK and across Europe, we look forward to welcoming the local community, both as guests and new members of our team. Being able to grow and create jobs is a huge privilege and plays a large part of our current strategy, with several exciting developments in the pipeline, both nationwide and internationally.”

Sticks ’n’ Sushi was established in 1994 by brothers Kim and Jens Rahbek Hansen, who are half Danish and half Japanese, along with Thor Anderson.

Since opening their first restaurant in Copenhagen, the group has expanded to 12 locations in and around the Danish capital, 15 across the UK, and three in Berlin, Germany.

In January 2024, private equity firm McWin—also an investor in Big Mamma Group and Gail’s—acquired Sticks’n’Sushi and revealed plans to expand the brand into new markets over the next five years.

Then, in April, Formula One driver Fernando Alonso joined as an investor in the restaurant group.
