Charles Wells opens second Apostrophe pub after £1.2m revamp


Charles Wells and Chris Gerard has opened a second Apostrophe Pubs outlet, The Merlin’s Cave pub in Chalfont St Giles.

With a £1.2m investment, the village pub was stripped completely back to basics and has had two large extensions to make way for a spacious bright dining area and a large open kitchen.

The bar and restaurant area in the pub is bright and spacious and also has a number of cosy corners including the intimate Merlin’s Cave snug.

Menu offers dishes like traditional Bucks Bangers & Mash, Fillets of Bream or Salmon & Dill Fishcakes, and Duck Dumplings. There are also plenty of veggie options and a range of sharing plates like the Antipasti grazing board. There’s also a two course lunch menu on offer for £12.95.

Apostrophe Pubs are also famed for their quirky puddings and the Merlin’s Cave’s signature dessert is a Nutella Peanut Butter Jelly Sandwich.

The bar is packed with refreshing world lagers, a whole host of styles of bottled and cask ale crafted in Bedfordshire, fruit ciders and beers.

The handpicked wine list is full of every flavour and style you can think of and for those looking for something soft there’s a whole range of fruit drinks from Devon alongside the usual favourites.

Apostrophe Pubs transformed the d’Parys in Bedford into a multi award nominated pub and restaurant with rooms.
