Bubbledogs & Chick ‘n’ Sours swap founding chefs

This summer, bubbledogs’ co-founder Sandia Chang and Chick ‘n’ Sours founder Carl Clarke will be swapping aprons for two kitchen takeovers in July and September.

Taking to the pass to try their hand at each other’s signature dishes, Chang will cook up a homage to the humble chicken whilst Clarke will create two special hot dogs and a host of sides to be served, in true bubbledogs style, with a glass or two of grower Champagne at their Charlotte Street home.

Clarke’s menu will be in residence for one night only, kicking things off on the 19th of July with the Chengdu Chilli Dog, topped with Eastern promise in the form of kimcheese and white kimchi, and the Thai Dog with fermented som tum, Thai ranch sauce, and crispy crack noodles.

Hotdogs will be in good company with perfectly matched sides including; Tenderstem broccoli, seaweed mayo, pickled egg and bonito flakes, Tater tots, Korean schmaltz, spring onion and sesame and, to finish with a bang, Smacked cucumber with explosive chilli.

No hot dog party would be complete without popping a few corks, and Sandia will be on hand with her carefully curated list of grower Champagnes, from the refreshing acidity of JM Seleque to bubbledogs’ own label Collin-Guillaume, Rose´, Brut.

Next up, Chang will make the trip to Chick ‘n’ Sours on the 20 September where she’ll dish up her take on two classic chicken dishes; Wings in a fiery chipotle maple glaze, and Cap’n Crunch fried chicken strips, alongside Grilled Mexican street corn slaw, jalapeño popper wontons with ranch sauce and roasted onion dip with radish.

Sour cocktails, local beers and a Chick ‘n’ Sours signature soundtrack will provide the backdrop to the evening, finished off with soft serve ice-cream to cool things off.

Chang said, ‘As a mega-fan of Chick ‘n’ Sours I’ve always been keen to have a rummage around in Carl’s kitchen, and when he agreed to let me get my hands on his restaurant for a night, we both thought it would be fun to do a swap.

'As a Chef, you always relish the chance to get creative and go outside of your comfort zone, and coming up with new recipes is the best part – I also can’t wait to see how our hotdogs are going to get the Chick ‘n’ Sours spin!’

The Chick ‘n’ Sours menu at bubbledogs will run on 19 July, and the bubbledogs menu at Chick ‘n’ Sours (Haggerston) will run on 20 September.
