Cornish Bakery expands further with three new stores and significant growth in York


Cornish Bakery is gearing up to open three new locations in Hereford, Woodbridge, and Gunwharf Quays in Portsmouth, while also significantly expanding its popular Coney Street bakery in York—more than doubling its size. This “hat-trick and a half” marks the latest milestone in the brand’s ongoing growth journey.

Set to mark another standout year for Cornish Bakery, three new locations will open from July 2025, with an additional five sites currently in the legal stages to be announced soon. These developments form part of an ambitious growth strategy that has identified the potential to expand from the current 66 bakeries to as many as 411 across the UK.

Originating from a small fishing village in Cornwall, Cornish Bakery has grown impressively beyond its coastal roots. Initially thriving in tourist hotspots, the brand has since expanded into market and cathedral town high streets, smaller cities, designer outlet villages, motorway service areas, and even the NEC in Birmingham.

On July 7th, Cornish Bakery will unveil its dramatically expanded flagship bakery on Coney Street in York, following the acquisition of the adjacent unit previously occupied by Krispy Kreme. The transformation more than doubles the existing space, boosting seating capacity from 16 to 66 across two stylishly redesigned floors. Having enjoyed strong success in York since 2017, this significant expansion underscores Cornish Bakery’s continued investment in the city and reaffirms its long-term commitment to the area.

The first of Cornish Bakery’s summer openings will launch in Hereford on July 21st. Situated at 9 High Street in a prominent corner unit, the new bakery breathes fresh life into a long-vacant site near the city’s Cathedral and renowned Chained Library. With its striking burnt terracotta shopfront, spacious open-plan interior, soaring ceilings, and expansive windows, it promises to be one of the brightest and most welcoming spaces in the city—offering seating for up to 60 guests.

On August 11th, Cornish Bakery will open a beautifully designed, premium bakery in the heart of Woodbridge, Suffolk. Located at 37 Thoroughfare, the 124-square-metre space will feature a light-filled, open-plan interior with seating for 45, along with a welcoming outdoor area. Drawing inspiration from Woodbridge’s rich boat-building heritage, the design includes a hand-crafted wooden bar, maritime-style pendant lighting, and a soft, classic colour palette. Thoughtful touches such as mid-century seating, natural planting, and elegant timber panelling will create a calm, inviting environment for guests to relax and enjoy.

Later this year, Cornish Bakery will open its largest-ever location at Gunwharf Quays, the vibrant waterfront shopping destination in Portsmouth. Having successfully traded at the outlet since its opening in 2001, the brand’s continued presence aligns with Gunwharf Quays’ newly announced redevelopment plans, which aim to enhance shopfronts, upgrade facades, and improve overall landscaping.

Cornish Bakery has secured a striking new two-storey unit at Gunwharf Quays, complete with a stunning balcony terrace. It will operate alongside the recently opened permanent kiosk, which has enjoyed consistent success since its launch. Designed to meet strong and growing customer demand, this impressive new space is set to become a flagship destination for the brand.
