Cotswolds hotel Wild Thyme & Honey has appointed David Brown as Executive Head Chef of its village pub and restaurant, The Crown at Ampney Brook.
With over 15 years’ experience in the industry, Brown joins from Lewtrenchard Manor a 2AA Rosette restaurant in Devon where he held the position as Head Chef and was responsible for the day-to-day running of the kitchen, as well as menu curation and execution.
Brown’s culinary ethos is rooted in the use of high-quality, seasonal, and fresh local produce, bold flavours, and a blend of classical techniques with modern interpretation.
Having also formed longstanding relationships with some of the best suppliers in the country, hotel guests and diners can expect farm-to-table modern British menus that roll with seasons. Making the most of the centuries-old farmers and local suppliers in the neighbouring area to source the best quality meat, fish and vegetables.
Speaking on his appointment, Brown commented: “I am incredibly excited to join the brigade at Wild Thyme & Honey and put everything I’ve learnt from my career into the Executive Head Chef role. Our venue is stunning and it’s imperative the quality of food remains an extension of the beautiful surroundings. My objective is to maintain and further its reputation as a gastronomic destination, where every guest has an amazing experience from the moment they walk through the doors until they leave.”

Wild Thyme & Honey Hotel opened in December 2021 and has 24 bedrooms, which feature a colour palette of soft greys and rich creams, paired with Cotswold stone, timber cladding and views of the countryside.
The Crown at Ampney Brook sits snugly adjoined to Wild Thyme & Honey and has been lovingly restored from a 16th century inn to create something beautiful and long-lasting for the local community.
Roaring fires, inviting sofas and comfy lounge chairs create a warm and charming atmosphere, there is also an outdoor terrace with three glass dining domes overlooking the babbling brook. The Crown also boasts a number of private dining rooms.
