Paul Burgalières named executive chef at L'Enclume


Paul Burgalières has been appointed as the executive chef of Simon Rogan's three Michelin-starred restaurant, L'Enclume.

Burgalières assumes the role following his six-year tenure as head chef at the Cumbrian restaurant. Alongside Simon Rogan, the French-born chef played a pivotal role in leading the team to achieve the restaurant's third Michelin star in 2022, marking a significant milestone in its twentieth year since opening.

Burgalières, who proudly represented the UK in the Le Taittinger Prix Culinaire in January of this year, has now assumed the position, succeeding Tom Barnes.

Barnes is set to launch his debut restaurant, Skof, in Manchester in early 2024, joining the UMBEL Restaurant Group portfolio.

In his role as executive chef, Burgalières now presides over L'Enclume, Aulis Cartmel, Rogan & Co, and Henrock. Alex Rothnie has taken on the position of head chef at L'Enclume.

Furthermore, Kayleigh Thorogood, previously serving as the restaurant manager at the one Michelin-starred Rogan & Co, has been named assistant operations manager for Simon Rogan's restaurants in the north-west.

Thorogood initiated her journey within the group as a demi chef de rang at L'Enclume, progressing through the ranks to junior assistant restaurant manager and eventually assuming the role of restaurant manager.

On the appointments, Rogan said: 'Our team in the Lakes is hugely talented and I am proud to work with such tremendous individuals. To see them grow and develop is a privilege.'
